Do these particles attract each other? it looks like there is some sort of cohesion forces going on

I think there should be some force to attract nearby particles. Think about the van der Waals force between molecules

Any particle based liquid simulation seems a bit too jittery usually, or like there's always some particles that fly off. Is this just an unfortunate reality of physics approximations, or is there anything we can do to fix/reduce this?
