Why is there that aliasing pattern on the second statue? It makes sense that there would be fairly large areas of yellow and blue because it's a lower frequency basis vector but it seems odd that there would be those patterns as well.

The patterns are probably due to the fact that whoever visualized the mesh also drew some white lines for the "nodal" lines, i.e., the places where the function passes through zero. Indeed, it does add a bit of aliasing to what should otherwise be a smooth function.
