I know this was also covered/mentioned in the previous lecture as well, but I am still a little confused how N^(T)x = c encodes a line/plane. Could this be re-explained?

If N=[a,b,c] is the normal of the plane and x=[x,y,z] is your point, testing if their dot product (N^Tx) is equal to d gives us the equation of a plane: ax+by+cz=d
