Why do we care less about interpolation than the other two properties in animation?

Is it true that we can almost always make up for the "interpolation" aspect by putting in more efforts, e.g. frames?

Which spline interpolation is considered the most generally applicable or is utilized in the largest range of problems and why? I understand that each has their own use cases and applications in which they respectively perform the best, but still curious.
