How does our current scientific knowledge of light explain why the over operator generates transparent objects realistically?

How much worse is compression for RGB compared to YCbCr? If the compression algorithms improved for RGB, would there be less motivation to use these other encodings in digital video?

Then, the premultiplied over-operator algorithm must be different for HSV values compared to the one we used earlier?

Do we generally know what color model is good for what type of task, or is it random and with every task, we want to try the different color models to see which one fits best?
