What is the reason behind the vertical flipping of the camera?

The picture essentially provides the explanation: imagine that you're sitting at a point on the back of the camera. What color do you see? The answer is: the only color you can see is the color you get by looking along the straight line connecting you to the pinhole. So if you're near the top of the camera, you'll see the bottom of the tree, and if you're near the bottom of the camera you'll see the top of the tree. Hence, the image is flipped.
